Muffin mix--Rachelle Stevenson via Anne & Rick Dry ingredients 4 1/2 C whole grain flour 8 tsp baking soda 1 tsp salt 1 C flax seed or sunflower seeds or half of each Wet ingredients 2 C unsweetened apple juice 2 C All Bran (low sugar) 1 C oil 2 T honey 1/2 C Splenda 4 eggs (or equiv eggbeaters) 32oz plain yoghurt 2 C applesauce (or 1C + 1C pureed sliced peaches) 4 C amaranth flakes or bran flakes 2 C raisins, or half & half with dried apricots 4 C chopped pecans Mix wet ingredients in large bowl pour 2 C very hot apple juice over 2C AllBran, stir stir in 2T honey + 1/2C Splenda stir in 4 beaten eggs stir in yoghurt, applesauce, 4C bran flakes Mix dry ingredients, stir into wet, add pecans, dried fruit let batter sit in fridge overnight. Will store in fridge for up to a month. Serves hordes.
