Lentil Curry 1T olive oil 1 medium onion, finely chopped 2T curry powder 1# sweet potatoes, peeled, cut to 1-inch chunks 1 head cauliflower, bite-size 1C brown lentils, rinsed and drained 2 14.5oz cans diced tomatoes with juice coarse salt plain low-fat yogurt for serving heat oil; cook onion; add curry, stir 1 min; add other ingredients and 1 1/2C water; season with salt; bring to boil; reduce to simmer; cover and cook until tender, about 30 minutes.
